Electronic Noses and Tongues in Development and Quality Control

Electronic noses and tongues have been developed as an alternative to human sensory panels. Therefore they mimic the behaviour of the human chemical senses. Such instruments consist of appropriate chemosensors with overlapping specifity which create electric signals upon the contact with an aroma or odour. The resulting signal pattern is characteristic for the chemical compounds and can be recognized by comparing it with memorized data. This opens the door to many fields of application where the recognition or comparison of samples with known odour or taste is required. Further more, changes during storage can be detected.
